Ribeye Steak

A well-marbled ribeye charred on the outside and rosy within, plated with roasted vegetables and a glossy pan sauce.

  • Dairy (butter in sauce)
  • Possible soy if using Worcestershire

Recipe

Ingredients

  • 1 ribeye steak (about 350 g)
  • 1 tbsp neutral oil
  • 2 tbsp unsalted butter
  • 2 garlic cloves, smashed
  • Fresh thyme
  • Roasted seasonal vegetables
  • 60 ml beef stock
  • Sea salt and black pepper

Method

  1. Bring steak to room temperature; season generously with salt and pepper.
  2. Sear in a hot pan with oil, 3–4 minutes per side for medium-rare, basting with butter, garlic, and thyme.
  3. Rest the steak 5–8 minutes. Deglaze the pan with stock and whisk in remaining butter for sauce.
  4. Slice against the grain and serve with roasted vegetables and pan sauce.
